Research
I am currently undertaking research looking at the biosynthetic pathway of
tartaric acid in grapevines. Grapes belong to one of only 3 higher plant
families (Vitaceae) which produce tartaric acid in high quantities; the reason
for the production and storage of this acid is unknown. I will be focusing on
identifying and characterising the enzymes involved in the synthesis of this
organic acid.
